Pumpkin Pecan Waffles with Apple Cinnamon Compote

1/2 cup pumpkin puree

1 cup spelt flour (or Oat if GF)

1 cup almond meal flour

1 tsp baking powder

1/2 tsp baking soda

pinch sea sealt

1/2 tsp nutmeg

1/2 tsp cinnamon

1 egg

1 cup milk

2 tbsp canola oil

2 tbsp chopped pecans


Mix ingredients in a large bowl, stirring well.  Heat a Belgian or regular waffle iron and spray with Cooking spray.  Pour batter and heat as usual.  (Each waffle iron varies). Set waffles aside or plate them.

Apple Cinnamon Compote Topping

1 apple of choice, cored and diced, skin on.

2-4 Tbsp pure maple syrup

1/2 taps Ceylon cinnamon

Place all ingredients into small sauce pan.  HEat on medium until begins to bubble, then reduce to low.  Be careful not to heat on too high heat or for too long as it will become think and sticky.  Heat until apples just begin to soften.  Pour compote over waffles and enjoy this fall comfort food.
