Kale, Avocado and Grapefruit Salad

This is a crisp, light and flavorful salad.  It works well as a side or as a main meal.  I have added grilled shrimp to this and it is a great, light meal.


4 cups baby Kale

1 ripe avocado, halved and cubed

1 grapefruit, halved.  Peel one half and cut into 1 inch chunks.  Juice the other half.

2 tsp toasted sesame oil

1 tbsp rice wine vinegar

Place baby kale, sectioned avocado and grapefruit into a large bowl.  In a small bowl, whisk 3-4 tbsp grapefruit juice with sesame oil and rice wine vinegar.  Taste, and adjust accordingly:  if too bland, add more grapefruit juice and/ or vinegar.  If too bitter- add more sesame oil.  Once flavors seem balanced, pour dressing over salad and toss to mix well.  It helps break up tougher fibers in Kale to massage dressing into salad- gently.  Let the salad sit for 20-30 minutes before serving as it is best once flavors absorbed into Kale.  Enjoy!  Add some shrimp or chicken from grill to make this salad a main meal!  Bon appetite!
