(Makes 16 scones)

These are a hearty, yummy grab and go breakfast or snack. I like these with my coffee or tea in the morning.

2 Cups Oat Flour
1 1/4 Cup Almond Meal Flour
1 cup Oatmeal (I ran out of aots and used the Trader Joe’s Ancient Grains Mix…YUM)
1 tbsp baking powder
1/2 tsp sea salt
4 tbsp cold butter, cut up
4 tbsp coconut oil, solid form
1/2 cup milk of choice
1/2 cup maple syrup (real, pure- good quality syrup)
2 eggs beaten
1 mashed banana
1 cup chopped blackberries

Heat oven to 400 degrees and line 2 baking sheets with parchment paper. Mix top 5 dry ingredients in a medium bowl. Using a pastry knife, mix in the butter and coconut oil unitl incorporated and “meal-like”. In a small bowl, mix milk, syrup, eggs and nbanana. Mix well and pour into dry ingredients. Stir to combine to thick consistency. On a parchment lined sheets, drop heaping spoonful of mix, about 3 inch round, onto sheets. Leave about 1.5 inches between scones. Bake at 400 degrees for 20-23 minutes, until browned on edges.

While scones are baking, make glaze.
mash 1/3 cup blackberries in a mesh colander into a bowl. THis will juice the berries, but remocve the seeds. Add 1/2 cup of confectioners sugar and tsp of vanilla to blackberry puree and stir to combine. Pour glaze into a plastic sandwich bag. With a scissor, snip off the small corner and drizzle the glaze over the top of each scone. Bon Apetite!
