Avocado Egg Salad Boats
These are a nutrient packed, fiber and healthy fat loaded lunch or snack. I have made these as appetizers or party nibbles, as after school snacks, mid morning snacks and for a gluten free lunch option. They are creamy, crunchy with a hint of sweet from the red pepper. Feel free to play with different versions. Go ahead… Play with your food!
1-2 hard boiled eggs per person, peeled
1/4 acvocado per egg
pinch sea salt
2-3 medium mini organic red peppers or half a large red pepper per person
In a small bowl, mash the egg and avocado with a pinch of sea salt to taste. Spoon the egg mixture into half of the red pepper. If you are serving as an appetizer and want to snazz it up- you can chop either parsley, chives or dill, depending on your taste preference, and sprinkle the herb over the top of each pepper boat. So simple, so delicious and so nutritious!
